During the spring-summer period the cattle are grazed. During this period there is the greatest production, the product is particularly valuable thanks to the different essences of grass of the pastures on which they feed. When the pastures end, the diet is mainly based on farm-sourced forage and flour. However, silage is excluded from the diet. The shape is spheroidal, the size of about 2 kg more common up to 10 kg. The seasoning ranges from 45/60 days to over six months. The paste is straw yellow in color which tends to accentuate with aging, with rare holes, semi-hard and homogeneous to the touch. If it is not very matured it has a delicate scent of milk, with the continuation of the maturation the smell of grass-hay stands out. All the organoleptic characteristics emerge on the palate, especially with the continuation of the seasoning: hints of cut grass, bitter flowers, vanilla and spices and sometimes slightly spicy. After an initial drying, which can take place in traditional cool rooms, not before 45/60 days, it is seasoned in the typical "tufa caves" where a microclimate and microflora develop that are favorable for the maturation of the long-seasoned caciocavallo, even up to two years. In the "natural caves of tuff" or "natural caves of tuff and stone" the caciocavalli, tied in pairs, are hung on "horses" on wooden beams. The humidity fluctuates between 80 and 90% while the almost constant temperature between the winter and the summer period, fluctuates between 10 and 15 °C. read less
